The Honey Sun-Dried process sits beautifully between washed and natural coffees.

After harvesting, a portion of the fruit mucilage is intentionally left on the coffee seed during drying. As the coffee slowly dries under carefully managed conditions, the remaining fruit sugars contribute to greater sweetness, a fuller mouthfeel, and vibrant fruit expression while preserving remarkable clarity.

The result is a cup that feels bright and juicy, yet refined and beautifully structured.

Sunlit is roasted to highlight clarity, sweetness, and lively acidity. It performs exceptionally well in clean paper-filter brewing methods.

Like all lightly roasted coffees, Sunlit continues to develop after roasting.

While it's enjoyable from 7 days off roast, we recommend resting it for 10–12 days to allow the sweetness, body, and fruit clarity to fully integrate.

Peak Expression

Best enjoyed between 10–28 days off roast.

As the coffee rests, expect a rounder body, deeper sweetness, and a beautifully balanced expression of mandarin, ripe mango, and sweet lime.
