RADIANCE
Ratnagiri Estate · Catuai · Sequential Fermentation Mossto
Some coffees reveal themselves slowly. Radiance arrives all at once.
Produced by Ashok Patre at Ratnagiri Estate, this experimental Catuai lot uses a multi-stage sequential fermentation with coffee-cherry mossto, followed by a meticulous double-washed finish.
The result is intensely fruit-driven yet remarkably articulate: Alphonso mango, fresh raspberry and passionfruit, carried by a deep, lingering sweetness reminiscent of dark honey.
Alphonso Mango · Fresh Raspberry · Passionfruit · Dark Honey
Acidity: High, vibrant & fruit-led
Sweetness: High
Body: Full, velvety & syrupy
Finish: Long, clean & honeyed
Radiance begins with ripe tropical sweetness before a vivid red-fruit acidity comes into focus. As the cup cools, passionfruit becomes increasingly apparent, while a dense honey-like sweetness anchors the finish.
Bright, juicy and beautifully expressive.
Grown by Odishi Coffee in the lush hills of Koraput, this Honey Sun-Dried Chandragiri celebrates the region's vibrant fruit character.
It opens with the lively sweetness of mandarin orange, unfolds into luscious ripe mango, and finishes with a sparkling sweet lime acidity.
A silky, coating body brings remarkable balance, creating a cup that feels both vibrant and effortlessly elegant.
This coffee gets its name from the way it is processed.
Freshly harvested Chandragiri red cherries are fermented for 48 hours in airtight barrels together with grape wine, oranges and spices.
The cherries are then carefully shade dried for approximately 28 days.
The extended drying allows moisture to leave the fruit gradually while the coffee develops its characteristic depth and sweetness.
The result is an intentionally experimental profile where fermentation plays a significant role in the sensory experience: dark fruit becomes more pronounced, citrus adds lift, and warming spice runs through the cup.
The process, simply:
Ripe Cherry → 48-Hour Airtight Fermentation → Grape Wine + Orange + Spices → 28-Day Shade Drying

V60 — Our Preferred Recipe
Coffee: 15 g
Water: 240 g
Temperature: 91–92°C
Grind: Medium-coarse
Total Brew Time: approximately 2:30–2:50
Pouring
40 g bloom — 40 seconds
Pour gently to 140 g
Finish at 240 g
Keep agitation controlled and allow the bed to draw down naturally.
Expect:Alphonso mango → raspberry → passionfruit → dark honey
I would particularly encourage drinking this coffee as it cools. The tropical notes should become considerably easier to separate at a lower temperature.
AeroPress — Juicy & Syrupy
Coffee: 15 g
Water: 220 g
Temperature: 90–91°C
Grind: Medium
Add the full water dose, stir gently and steep until approximately 1:45.
Press slowly, finishing around 2:10–2:20.
Expect:More mango, heavier sweetness, softer acidity and a dense honey-like finish.
Espresso — Tropical & Intense
A good starting point:
Dose: 18 g
Yield: 40–42 g
Temperature: 91–92°C
Time: approximately 28–32 seconds
The slightly longer ratio should help keep the tropical fruit expressive while preventing the fermentation character from becoming too heavy.
Expect:Mango nectar, raspberry-like acidity, tropical fruit and lingering honey sweetness.
Enjoyable from:
7 days after roast
Recommended rest:
10–12 days
Peak expression:
10–28 days off roast
As the coffee rests, expect:
deeper sweetness
rounder body
improved integration
more expressive tropical fruit
Choose Mulled Wine if you enjoy coffees that are bold, aromatic and a little unconventional.
It is particularly suited to someone who enjoys:
Experimental processing
Fruit-forward coffees
Wine-like fermentation character
Rich, syrupy cups
Warm spice and dark-fruit flavours
If your preference is extremely clean, delicate and tea-like coffee, this probably isn't where I would start.
But if you enjoy discovering just how far coffee flavour can travel beyond the familiar, Mulled Wine is exactly that kind of cup.
